Thai Chicken Lettuce Wraps

With the New Year recently upon us many individuals are making it a goal to get fit.  I recently stumbled across this recipe while looking for something to make for dinner.  I loved how it turned out and couldn’t wait to share it with you today.  You will love the rich, bold & unique flavor these amazing Chicken Lettuce Wraps have.  They are perfect for dinner parties or a quiet evening at home with the family.


Ingredients Needed:


1 Tbsp Oil

2 Chicken Breasts Diced

Minced Garlic

½ Sweet Onion

Finely Shredded Cabbage

Finely Shredded Carrots

Pepper

Salt

Green Onions


Ingredients for the Sauce:


¼ C. Cilantro

⅓ C. Sweet Chili Sauce

1 Tbsp Peanut Butter

¼ tsp Ginger

2 tsp Soy Sauce


To Make:


Saute the Chicken , Onions & Garlic in the oil.  Cook until Chicken is no longer pink.  Once Chicken is completely cooked add the shredded cabbage, carrots & green onions.  Then cook for 4-5 more minutes or until your vegetables are cooked through.


While your vegetables and Chicken are simmering, mix together your sauce.  Combine all ingredients in a small bowl.  Mix completely and place in fridge until it’s ready to eat.


After your Chicken mixture is completely cooked take it off the stove.  Add the mixture to your lettuce.  Roll your lettuce up like a taco & enjoy with your sauce.
