How to Make Honey Lime Enchiladas
One of my very favorite things to make for dinner is Honey Lime Enchiladas. It’s seriously one of my favorite meals that I have been making for years. I have tweaked my recipe and have finally found an amazing recipe that I want to share with you today. I hope you enjoy it as much as I do!
Items Needed:
- Tortillas
- Can of Black Beans
- Lime Rice with Cilantro
- Chicken
- ½ C. Honey
- ¼ C. Fresh Lime Juice
- 1 Tsp Chili Powder
- 1 Tsp. Cumin
- Green Enchilada Sauce
- Cheese
To Make:
About 6 hours before you are going to eat place your Chicken, Honey, Lime Juice, Chili Powder, & Cumin in the crockpot on low heat. Let it slowly cook all day. This will make your meat moist & tender.
A half hour before prep time, pull your chicken out of the crock pot, shred it & return it back into the crockpot. If all the juices have cooked out add a little more of the Lime, Honey mixture.
Once your shredded chicken has sat in the crockpot for another ½ hour, take it out & get your enchiladas ready to assemble together.
Place your Chicken, Black Beans, & Rice in the middle of your tortilla. Then sprinkle some cheese inside over the mixture.
Fold your tortilla up into a burrito so that the inside mixture won’t fall out. Place your wrapped enchilada into a greased casserole dish.
Once all your tortillas are filled, wrapped and placed in your casserole dish, pour your container of green enchilada sauce over the top & sprinkle with cheese.
Bake your enchiladas at 350 for a half hour or until cheese is melted and enchilada is cooked through!
